Rosie has a hankering for a spinach and shrimp quesadilla.
And when I get a hankering,
I gotta scratch that itch.
I swirled a little oil in a hot pan
and gave it a few drops of sesame oil.
A little sesame oil goes a long way,
so just use a few drops and taste test.
Toss spinach in the hot oil.
Give it a few shakes of sesame seeds.
Cook spinach over medium high heat
until just wilted.
Squeeze out as much moisture out of the spinach
as you can before spreading spinach
over half of tortilla.
Add some shrimp.
Top with grated cheese and chopped red onion.
Fold tortilla over and press.
Heat up a thin layer of oil
and carefully place quesadilla in pan.
Brown quesadilla on each side.
Serve with creme fraiche and your favorite salsa.
Consider that itch scratched.
