Rosie is making a pizza today.
Mr. Hawthorne is still on his "diet,"
so he's not eating any bread products.
Not a problem for Rosie.
She can improvise.
Meet my pizza "crust."
Pound a boneless chicken breast
to about 1/4-inch thickness.
Use plastic wrap.
Trim off the fat.
Season lightly with salt and pepper.
A quick trip to the garden yielded
peppers, basil, and tomatoes.
I peeled, seeded, juiced, and sliced my tomatoes.
Cover with a layer of basil.
I gave my half a good crumbling of goat cheese.
Mince peppers ...
... and add to pizza.
Giada has found squirrels in my bay tree.
She's trying to figure out how to climb the tree.
Sliced onions over top.
Give it a little olive oil on top.
Shredded mozzarella.
425 degrees for about 12 minutes
or until chicken is cooked through
and you have a nice browning on top.
I'm loving my crustless pizzas!
Last time I made a pizza for Mr. Hawthorne,
I used pork and made a porkza.

ReplyDeleteYou should have! My husband dropped 40 pounds this year too! It's amazing how different he looks! I'm still convincing him to buy new clothes though!
