Youngest Hawthorne and his lady friend just came in at 5PM and he immediately asked, "Is dinner ready?" How am I supposed to know when these kids are going to drop in and want to eat?
So, I said, "Gimme 15 minutes."
I took my crystal clear consomme that I had thawed out and partially used the other night for my General Tso's Chicken. Heated it up.
I found some chicken and leek dumplings Mr. Hawthorne had bought at the Asian market in Chesapeake.
I boiled the dumplings for about 10 minutes, then added my frozen peas.
I ladled the consomme, dumplings, and peas INto the bowls, offered some soy sauce and chili sauce, and gave the kiddies a hearty "Bon Appetit!"
Note to readers: Always have stock or homemade consomme on hand. Also a good idea is to have different types of dumplings to add INto a soup. And always, always, have frozen peas. This quick, delicious meal was made in 15 minutes. (That is after hours and hours of cooking stock, then clarifying it for the consomme.)
Bottom line, the kids loved it.
