Rosie's Yummy Supper.


I decided to make a Caesar Salad tonight. First I've started on my croutons. I melted a stick of buttah (Land o' Lakes Unsalted) with a little bit of olive oil (Bertolli's Extra Light). I added about 4 large cloves of minced garlic and chopped fresh parsley, sage, rosemary, thyme, and oregano from my garden. Now of course if you can find a seasoning packet with all this that would be f'ntastic. Don't brown your garlic, else it will be quite bitter.











I've cubed a loaf of bread from my regular groshery shtore and tossed it in the oil/buttah/herb mixture to coat thoroughly.














Spread croutons in a single layer on a baking sheet and bake in a slow oven (225 degrees) stirring occasionally, until nice and brown and crispy - about 2 hours.












And here are my toasty, crunchy nuggets of flavorful goodness. Once again, you can "see the flavor," just like Aunt Sandy, that is, if you've had a few 'tinis already.











I'm also having a pot roast tonight. I've salted and peppered a 2.6 pound boneless beef chuck roast and placed it in my clay cooker, along with a can of beef broth and about a cup of Barefoot Shiraz.

I will cook the roast, covered, at 350 degrees for 30 minutes and then add the veggies. Waiting on deck: chopped carrots, chopped celery, a whole head of garlic, an onion waiting to be sliced, and a white sweet potato and russet potato waiting to be sliced.

After cooking for 30-45 minutes, I added the veggies. And POPPED it back INto the oven!
























Here's Mr. Hawthorne's mise en place for his Caesar Salad dressing.










First, Mr. Hawthorne minces the yucky anchovies.













Next, he adds about 6 large cloves of garlic.













Then add the juice of 2 lemons.





















Next, Mr. H. adds a big glop of Poupon Dijon.













Pour in some Worcestershire sauce.


















Now, Mr. Hawthorne coddles an egg. He nukes a cup of water in the microwave until boiling, then plops the egg in the water for 1 minute.
















Now, add the egg to the mixture.

At this point, Mr. H. tastes and tweaks. He also goes by color. Your mixture should be a light "buckskin" as he calls it.









Next, whisk in a steady stream of olive oil.













And Wallah! A lovely, creamy Caesar Salad dressing.




Finally, grate Parmesan cheese INto your mixture. I prefer Il Villaggio.
