OH.MY.GRAVY!

Dinner tonight was absolutely wonderful.

Chicken was on sale today at FoodLion, so I had Mr. Hawthorne stop off on his way home from work to buy a few bosoms.

Here we have two chopped up chicken bosoms sitting in Tamari soy sauce and rice wine.

In the measuring cup, I have 2 TB soy sauce, 1 TB cornstarch, 2 tsp sugar, and 1 tsp white vinegar.


Now, here's my mise en place.
I have, from top right, my marinating chicken, my cornstarch thickening agent, my ginger joos in the ramekin and the ginger pieces right underneath, then chopped celery leaves and chopped scallions in the plate, some toasted cashews, then my fluting cutter, then at bottom right - some red pepper flakes.
At top left, I have a plate of broccoli, fluted carrots, celery, radishes, and onions. (That's broccoli stalks after the onions.)

Here, I've started stir-frying.
My fluted carrots, my broccoli, and my celery.














Damn, I forgot the garlic.
I quickly peeled and sliced garlic and added it to the mix, along with sliced radishes and the onions.

Right now, I'm doing the trick I learned from the China King boys. Adding the water after I've stir fried, to steam everything.

I undercook everything, then throw it all INto a bowl and cover it with a plate. It keeps on cooking a bit.





Fire up your wok, add a bit of oil, get it hot, then toss in the chicken bits with some garlic slices.













HAH! I forgot about the ginger pieces.
Just toss them on top of the sauteed chicken.























Here, I'm adding the soy sauce/cornstarch/sugar/vinegar mixture to which I've added the leftover chicken marinade (soy sauce and rice wine) and 1 cup chicken stock.

OK, OK, I didn't use stock. I used a damn chicken boullion cube. So SHOOT me!








Now, the jinjer joos goes in.









And now, the celery leaves
and the scallions.












Toss in the stir-fried veggies.
And finally the cashews go in.
I had salted cashews left over from
Christmas baking. I thought the cashews needed de-salting, so I put them in a strainer and ran water over them. Then, I put them in my toaster oven and toasted them for a bit.






WALLAH!!!!!!!

This was absofuckinlutely delish.
