I decided to make one of my family's favorite side dishes tonight-
Corn-bean-tortilla pie.

Here's my set-up.
I have a can of corn.
I have black beans that I cooked. You could use canned black beans but I like the real ones better. If you do use canned, be sure to rinse them off really well. They're slimy.
I have some fresh cilantro.
Some sliced jalapenos that Mr. Hawthorne canned this summer.
A jar of green olives.
A package of small tortillas. You could use medium. Or large. Really anything you have.
And an onion and scallions.
On the right is shredded cheddar cheese and Monteray Jack.
And that's Mr. H.'s hand sneaking some cheese.
Don't you just hate that when you do all the work and a hand sneaks in there?

I mixed the corn, black beans,
and about 1/4 of the onion, chopped.
I would add all the ingredients to this except certain persons in this household don't like everything I put INto this.

Now, I started layering.
I brushed melted butter on my pie dish, then laid down one tortilla. I put some Monteray Jack cheese and the corn/bean/onion mix on it.

Added another tortilla and
made a layer of cheddar and the corn/bean/onion mixture.

You just keep layering tortillas and the cheeses and the corn/bean mixture until you decide to stop.
Then brush the top and the sides with melted butter.

After brushing with butter, I took Cayenne pepper and threw it on the sides of the tortilla cake. On the top, I put on chopped tomatoes, sliced jalapenoes, green olives, cilantro, a sprinkling of cumin, and Jack and cheddar cheeses.
This is beautiful.
INto a preheated 350 degree oven for about 40 minutes. If the top starts to brown, put a foil tent over it.

ReplyDeleteI would like to make it known that if you add just a little too much cheese....or if you pile stuff too high in the middle so the sides are sloping down....you will not end up with a pretty cornbeantortilla pie
ReplyDeleteSo noted, Little GrassHopper. You are correct. I always build up the cheese on the outer layer of the tortilla to avoid this problem you mentioned.
