Rosie Makes A Lime Custard Pie.

Whenever we go grocery shopping,
we always check out whatever bargains are available.
I found these limes in the aisle of rapidly rotting foods at Harris Teeter. 
Eleven limes for 99 cents.
Looks like a lime custard is looming in our future.
Ingredients for the crust:
 1 package graham crackers, crushed 
 1/4 cup brown sugar, packed 
6 TB butter, melted  
Mix all ingredients.
Process the crackers until fine.
Add in melted butter and brown sugar.

... press out evenly.
Thusly.
Ingredients for filling:
 6 large eggs 
1 cup sugar
 1 cup heavy cream 
2/3 cup lime juice
 grated zest of 1 lime 
 Whisk eggs.
 Add in sugar, whisking, then cream and lime juice. 
Whisk in 1/2 of zest. 
Pour over crust.
Sprinkle remaining zest over top.
 Preheat oven to 350 degrees.
 Turn oven down to 300. 
Put in custard
 Bake for 60-70 minutes, until custard is set. 
 
Whisk in eggs.
Whisk in sugar, gradually.

Add in cream.
Whisk in lime juice until just combined.

Add in 1/2 of lime zest.
Pour into prepared crust.
Sprinkle remaining zest over top.
Ready for a preheated 350 degree oven.
 Cut temperature to 300.
 It's always a good idea when baking custards and pies
 to set your baking dish on a pan in case of spills and overflows. 
Let cool completely. Then refrigerate.
Lovely creamy, silky smooth texture.

This won't last long what with the Hawthorne boys being home.
If limes aren't your thing, you could use lemons or oranges.

I wonder what it tastes like. I never ate pies that have a citrus flavor. I hope I will like this one.
