The Hawthornes' soiree with Xmaskatie and Glowria continues.
I'm making a black bean composite salad
for our dinner tonight.
My ingredients are:
black beans
sauteed corn with sugar and cumin
red onion
radishes
cilantro
lime zest
s & p

First I rinsed my black beans.
About a cup or so.

Then I poured my beans into a pot of boiling, salted water.
I let it boil for about 5 - 10 minutes,
then I turned off the heat,
covered the pan,
and let sit it for an hour.
After the hour,
refresh the water,
bring to a boil again
and simmer until the beans
are the way you like them.
5-10 minutes.
I prefer al dente.
I hate a mushy bean.
When the beans are done,
rinse and drain.

Red onion, radishes, cilantro.
How much?
Add a bit and taste.
Adjust.
It's simple.
You make it like
you like it.

Chop up the onion, radishes, and cilantro.
On to the corn prep:

Mr. Hawthorne sliced corn off of three ears
and I sauteed the kernels in butter.

Add a little sugar to enhance
the natural sweetness of the corn.

Some salt and pepper.

Add a few poofs of cumin to the corn.
On to the assembly:

Pour black beans in the bowl.

Add in corn.

Red onions.

Radishes and cilantro.

Lime zest.
Yeah, I know it's a crappy lime.

Mix well and chill.
And enjoy.
This is wonderful by itself
or as a dip scooped up on tostitos.
And it's delightful
in this hot weather.
Every mouthful, you get different flavors
and they're all good.
Plus, it's so pretty!

scallops with a Wasabi cream sauce.
