Leftover Leftovers For The Hawthorne Chillun.

With all the Little Hawthornes at home
and with all their scheduling issues,
I need to be able to produce a meal
at a moment's notice.
And whatever leftovers I might have,
I need to incorporate them into the meal.
I hate having my refrigerator filled with
all the Tupperware and Rubbermaid containers.
In fact, just the other week,
I had yet another of what Mr Hawthorne
calls my "Tupperware Tantrum,"
in which I get so frustrated by the missing tops and bottoms
of the containers, that I take my arm and just sweep
everything off onto the floor,
then pile into boxes and leave it all
until I feel like sorting through the mess.
I still don't know where the missing tops and bottoms go.
And am I the only one who has this problem?
I had some hamburger meat leftover from
the stuffed peppers so I cooked that up,
adding some salt, pepper, and cumin.
I also had some leftover rice
so that went in the pan too ...
... along with the rice/black bean/corn/salsa/cilantro
mixture leftover from the stuffed peppers.
And here's my stuffing mixture ...
... which went onto a burrito.
I topped my burrito mixture with some queso oaxaca.
And topped the burrito with grated queso oaxaca.
Normally, I would pop this under the broiler
and broil until the cheese gets a pretty golden-brown.
Because of time constraints
and growling stomachs,
I had to take a short cut
and nuke this until the cheese melted.
I topped with more of of the corn salsa
and satisfied yet another belly.
Middle Hawthorne couldn't eat the whole thing
so he left this little piece for me.
And I'm not complaining.
I was very happy to be thrown a bone.

  4. At my house I think the tupperware runs off with the socks from the dryer during the night!
