Rosie's Potato Salad With A Kick.

The Mister and I wanted some potato salad the other day,
but something a little out of the ordinary.
I came up with this potato salad
which was a satisfying alternative
to your run-of-the-mill potato salad,
not that there's anything wrong with
run-of-the-mill potato salad.
I just wanted different.
My ingredients:
2 red potatoes, cooked and cubed
sour cream
ricotta
rice wine
Sushi vinegar
horseradish
Wasabi sauce
red onion
fresh chives
fresh dill
salt and pepper
2 tablespoons chopped red onion
1 tablespoon chopped chives
1 tablespoon chopped dill
I added in the chives, dill, and red onion to the potatoes,
then a few squirts of Helmann's Dijonnaise.
A big glop of sour cream.
A smaller glop of ricotta.
A few teaspoons of rice wine and Sushi vinegar.
A tablespoon or so of Wasabi sauce.
And a tablespoon or so of horseradish.
Mix all together. S & P.
Taste test.
And adjust ingredients as needed. For your OWN tastes. That's all the fun of cooking and creating. Tasting. Adjusting. Until you get it Just. Right. Just for you.
This was a unique potato salad.
I liked the punch of the
horseradish and Wasabi,
the spice of the Dijonnaise,
and the herbiness of the chives and dill.
Just the right kick of the Wasabi and horseradish, with the creamy, tempering pull-back of the "cheesy" ingredients, accentuated by the lovely greenery of the fresh herbs. Yes, I know that wasn't a real sentence. I'm just a stream of consciousness sort of person. Back to the tater salad: Just win/win all around for that.
