Rosie Makes Her Favorite Cake.

One of the Hawthornelet's little friends had a birthday July 1 and Rosie is baking him a cake - not just any cake, mind you, but one of the simplest, easiest, bestest cakes ever. I've blogged about it before, but it's so good, it's worth repeating. And it's ridiculously quick.
So quick, in fact, that I'm shooting pictures of the oven clock just to show you how quick. It is 9:13. Ready? Set? Go!
My mise en place. 2 cups flour 2 cups sugar 2 tsp baking soda 2 eggs 1 20 ounce can crushed pineapple with juice 1 cup pecan bits (optional) Mix all together. Pour into buttered 9 x 13 pan. Bake at 350 for about 30-35 minutes.
Flour goes in.
Sugar in.
Baking soda in.
One eggy weggy.
Two eggy weggy.
Start stirring.
Can of crushed pineapple.
I used a rolling pin to crush my nuts. Ouch. (12)
Nuts join the party.
Mix well ...
... and pour into greased pan.
And, ladies and gentlemen, it is 9:22 and the oven is only at 270 degrees. Nine minutes and I got all my ingredients together plus I took pictures of everything.
Here it is after about 35 minutes.
Let cool completely before frosting.
For the frosting, 1 stick butter, room temperature 1 package cream cheese, room temperature 2 cups powdered sugar (Or as Pauler calls it, confectionate sugar.) vanilla (I like vanilla, so I used about a tablespoon.)
Let butter and cream cheese soften, then beat.
Mix well ...
... then gradually add in powdered sugar while beating.
Add in vanilla.
And frost away. I cut the cake in half. The birthday boy gets one half and the Hawthornes get the other half.
This is so moist.
Wonderful flavor.
Quick, easy, and excellent cake.

I love this recipe! Since I was already making strawberry tarts I used strawberries instead of pineapple, and as all your recipes do, it tastes wonderful! Thank you

Nicki, thank you so much for your kind words. I must try the cake with strawberries and again with blueberries. Maybe some whipped cream.
