Very simple, easy, quick recipe
and if I had it to do over,
I'd double it.
Some baking recipes you can't double.
This one is doubleable.
And it is quite worthy of doubling.

Ingredients for Coconut Macaroons:
14 ounce package sweetened shredded coconut
14 ounce can sweetened condensed milk
1 teaspoon vanilla extract
2 extra large egg whites, at room temperature
1/4 tsp salt
And I just happened to have 2 egg whites on hand
leftover from the chocolate hazelnut truffle ganache.
Heat oven to 325 degrees.
Combine coconut, condensed milk, and vanilla.
Whup egg whites and salt on high speed
until they make medium-firm peaks.
Carefully fold the egg whites into the coconut mixture.
Drop batter onto sheet pans lined with parchment paper.
Bake for 25-30 minutes,
until golden brown.

Pour in the condensed milk
over the coconut.

Add in vanilla.

Mix well.

Beat egg whites, tilting the bowl,
to get the most volume.
Egg whites at room temperature
also gives you better volume.

I take that, as an entity,
as single.
Thus, "egg whites at room temperature" "gives."

Medium-firm is when the peaks bend over
a little bit when you pull out the beaters.

Plop egg whites into coconut mixture.

Carefully fold egg whites into coconut.

Use a melon baller
to drop neat little bundles of coconut
onto parchment paper.
Here's a baking tip:
Don't crowd your cookies.
Leave some personal space around them.

Bake for 25 or so minutes
until golden brown.
