Rosie Makes A Sweet Tater Casserole.

Everybody loves my Sweet Potato Casserole. As in there was NONE left after Thanksgiving dinner. Rosie's Sweet Potato Casserole
4 sweet potatoes 1 cup brown sugar 1/2 cup cream 1 stick melted butter 2 eggs, beaten vanilla Topping: brown sugar butter pecans marshmallows
Peel and slice the potatoes, drop in boiling, salted water, and cook until tender.
Assemble all ingredients.
Add cream to potatoes and beat until smooth.
Add eggs, beating.
Melted butter goes in.
Brown sugar.
Beat away.
Add in vanilla.
Spread into buttered casserole dish.
Top with brown sugar, pecans, butter, and marshmallows.
Bake at 350 degrees for about 30 - 45 minutes until marshmallows are nicely browned.
They ate it all.

I'm the only one who likes sweet potatoes in this family, but I bet they'd go after your dish! I will definitely try the potato rolls--I love to bake bread.
You really hit the ground running when you came back from your long trip. I'm sure it would have taken me a week or more to recover.

Of course they ate it all. There's nothing in there that isn't nirvana.
