Christmas Baking. Day 6. Cookie #17. Peanut Butter Coconut Bars.

Color Rosie red.
She apparently forgot to take pictures of her mise en place. Fie! Anyways, imagine this: 1 1/2 sticks butter, softened 1 cup sugar 1 cup smooth peanut butter 1 large egg 1 tsp vanilla 1/2 tsp salt 2 cups flour 2 cups coconut 1/2 cup chopped, salted, roasted peanuts Cream butter with sugar until light and fluffy. Beat in peanut butter. Beat in egg, vanilla, and salt. Add flour. Stir in coconut. Spread dough out on buttered 10 x 15 pan. Sprinkle peanuts over top and press in. Bake at 350 for 20-25 minutes. I whup the butter by itself first for about 1-2 minutes.
Then I gradually beat in the sugar and whup for 3 more minutes, until light and fluffy.
Beat in the peanut butter.
Add the egg.
Whup it good.
Vanilla in.
Slowly beat in flour.
Stir in coconut.
Turn out mass onto buttered baking pan.
Cover with plastic wrap and spread evenly.
The plastic easily pulls away from the dough.
Sprinkle nuts over top. If I had this to do over, I'd use a whole cup of nuts, not 1/2 cup.
Press nuts into dough.
Bake at 350 degrees for 20-25 minutes, until nicely browned.
See? Could've used a cup of nuts on top.
