Rosie Makes A Pineapple Birthday Cake.


Two of my friends had birthdays this past weekend
 and I turned to my tried and true recipe for Pineapple Cake
 with which to honor them.
 It doesn't get much better, or simpler, than this.
Another Trust Rosie moment.
This is one of the moistest cakes I've ever had the pleasure to taste.
Rosie always has a time test against herself.
It's 11:53 and I just turned on the oven.
Rosie scurries throughout her vast kitchen,
acquiring her ingredients and tools for her mise en place.
 Easiest recipe in the world.
 And one of the quickest.
And certainly one of the simplest.
 I've posted about it before, but in case you didn't see it,
I'm giving it to you again.
If you did see it, it's certainly worth repeating.  
Pineapple Cake  
For the cake:
 2 cups flour 
2 cups sugar
 2 tsp baking soda
 2 eggs, beaten
 1 20-ounce can crushed pineapple
 Whisk dry ingredients.
 Stir in eggs and pineapple with juice until just combined. 
Pour into buttered 9 x 13 inch pan. 
Bake at 350 degrees for 30-35 minutes.
 Cool before icing. 
For the icing: 
1 stick butter (8 oz.), softened
 1 package cream cheese (8 oz.), softened
 2 cups powdered sugar
 1 TB vanilla 
Beat softened butter and cream cheese.
 Slowly beat in powdered sugar.
 Stir in vanilla.
 When cake is cool, frost.
 
Rosie's batter is ready in minutes.
Rosie pours the batter into her buttered pan and checks her time.
Hmmm.
It's been only five minutes after turning on the oven
and setting up my mise en place and mixing my ingredients
 and I'm ready to bake.
The oven temp is only 195 degrees.
Big oven.

12:07 and 350 degrees.
34 minutes later and it's done.
Let cool completely before frosting.
1 package butter, softened
 1 package cream cheese, softened
 2 cups confectioners sugar
1 TB vanilla
Mix the butter and cream cheese.
Add in the sugar.
Add the vanilla.
I divided my cake into thirds and iced each cake.
 One third has already been delivered.
I used toothpicks to protect the icing.
Truly, this is a most wonderful cake.
You know you want a bite.

Hmm, my kind of cake recipe. Wonder how it could be turned into cupcakes?

I have tried this from you over a year and 1/2 ago, and it has become one of our favorites as well. SO delicious, so simple to make , a true winner!
