Day 10 Of The Rosiethon. Chocolate Pixies.





 
 It's Chocolate Pixie time!

These are so ...  Christmasy.


Rosie is lazy.
She only made one batch of cookies today.
BAD Rosie!

But what a GOOD batch it was!!

Chocolate Pixies
4 ounces unsweetened chocolate 
1/4 cup unsalted butter
4 large eggs
2 cups sugar
2 tsp vanilla extract
2 cups flour
2 tsp baking powder
1/2 tsp salt
1/2 cup chopped pecans, toasted
powdered sugar, to roll the balls in

Nuke chocolate and butter in large glass bowl.
Stir to melt.
Add eggs, one at a time, beating at medium speed after each addition.
Gradually add sugar, at low speed, beating until blended.
Stir in vanilla.

Combine flour, baking powder, and salt.
Gradually add to chocolate mixture, at low speed until blended.
Stir in pecans.
Cover and chill at least two hours.
(I left mine in the fridge overnight, or until I had time to bake them.)

Shape dough into small balls, roll in powdered sugar, and place on lightly greased baking sheets.

Bake at 300 degrees for 15-18 minutes.

Leave on baking pans for a few minutes, then remove to wire racks to cool.


Whisk together the flour, baking powder, and salt.


Combine the chocolate and butter and ...

... nuke.


Blend well.

Add in eggs,
one at a time ...

... beating after each addition.
Always stop and scrape down the sides.

Action yolk!


Gradually add sugar ...

... beating,
at low speed.

Vanilla in.

Beat in flour, baking powder, and salt mixture.

Stir in chopped, toasted pecans.

Cover and chill at least two hours.
I chilled for two days before I cooked these.

Using a small melon baller,
scoop cookie mixture and shape into balls.
Roll in powdered sugar
and place on lightly greased baking sheets.

Bake at 300 degrees for 15-18 minutes.


Remove to wire racks to cool.


Decorate obsessively.

I make something similar, but with no nuts, obviously. And my recipe uses cocoa and shortening. They are delicious though. One of the only cookies the husband requests...in fact it's what "Santa" requested this year!
