Day 11 Of The Rosiethon. Pecan Pie Bars.

 

It's Day 11 of the Rosiethon
and I'm making Pecan Pie Bars.

Pecan Pie Bars

On the left:
2 cups flour
1/2 cup sugar
1/8 tsp salt
3/4 cup butter

On the right:
1 cup packed brown sugar
1 cup light corn syrup
1/2 cup butter
4 large eggs, lightly beaten
2 1/2 cup finely chopped pecans
1 tsp vanilla extract

Combine:  
Flour, sugar, and salt in large bowl.  Cut in 3/4 cup butter thoroughly with a pastry blender until mixture resembles very fine crumbs.  Press mixture evenly into a greased 9 x 13-inch pan.  Bake at 350 degress for 17-20 minutes or until lightly browned.

Combine:
Brown sugar, corn syrup, and 1/2 cup butter in a saucepan.
Bring to boil over medium heat, stirring.
Remove from heat.
Stir 1/4 of hot mixture into beaten eggs, whisking briskly.
Return eggs to remaining hot mixture, whisking.
Stir in pecans and vanilla.
Pour filling over crust.

Bake:
350 degrees for 30-35 minutes or until set.
Cool completely in pan on wire rack.
Cut into bars.

Merry Christmas!

Take chilled butter and give it a tiny dice.

Flour, sugar, and salt combined.


Diced butter in.

Cut with pastry blender.


Cover with plastic wrap
and roll out evenly in 9 x 13-inch pan.
Bake at 350 degrees for about 20 minutes
or until lightly browned.

While the base bakes,
make the topping.
On the right:
1 cup packed brown sugar
1 cup light corn syrup
1/2 cup butter
4 large eggs, lightly beaten
2 1/2 cup finely chopped pecans
1 tsp vanilla extract

Add corn syrup to brown sugar and butter.


Take eggs and ...

... whisk away.

Melt butter, brown sugar, and corn syrup.

Swirl it.

Bring to a boil.


Remove from heat
and drizzle, whisking,
1/4 of the hot mixture into the beaten eggs.

Whisk. Whisk.  Whisk.

Pour tempered eggs back into chocolate.


Whisk it.

Add in vanilla.

Stir in pecans.

Take prepared crust ...

... and pour in pecan mixture.

Ready for bakey wakey.



Bake at 350 degrees
for about 35 minutes.
