The Rosiethon. Day 8. Cranberry Walnut Oatmeal Cookies.

 
 It's Day 8 of the Rosiethon.
Rosie is lazy.
She only made one cookie batch today -
Cranberry Walnut Oatmeal Cookies.


Cranberry Walnut Oatmeal Cookies

3/4 cup Crisco
3/4 sugar
3/4 cup firmly packed brown sugar
2 large eggs
2 tsp vanilla extract
1 cup flour
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
2 3/4 cups oatmeal
1 cup dried cranberries
1 cup chopped walnuts

Heat oven to 375 degrees.
Butter baking sheets.
Beat shortening, sugar, and brown sugar at medium speed until creamy.
Beat in eggs and vanilla.
Combine flour, baking soda, cinnamon, and salt.
Beat into shortening mixture until blended.
Stir in oats, dried cranberries, and walnuts.
Drop by rounded spoonfuls 2 inches apart on prepared baking sheets.
Bake 10-12 minutes, until light brown.
Cool on baking sheets a few minutes then place on cooling rack.



Mix shortening and sugars.


Eggy-weggies  go in.
Beat after each addition and scrape down sides of bowl.


Vanilla.


Mix dry ingredients
and add to sugar mixture at low speed.
Incorporate.


Stir in walnuts.
 
Dried cranberries.

Oatmeal.


Scoop with melon baller into small balls
and place on greased sheet.
Bake about 12 minutes at 375 degrees.
