Day 12 Of The Rosiethon. Coconut Cranberry Macaroons.

 
 I'm wrapping up my Christmas baking,
so my posts are coming fast -
as in several a day.

Welcome to Day 12 of the Rosiethon.
Today I'm making Coconut Cranberry Macaroons.





Coconut Cranberry Macaroons

1 1/3 cups sugar
4 large egg whites, lightly beaten
1 cup dried cranberries
grated zest of 2 oranges
4 tsp vanilla extract
1 tsp salt
6 cups coconut

Heat oven to 350 degrees.
Line baking sheets with parchment.
Whisk the sugar and egg whites.
Stir in cranberries, orange zest, vanilla, and salt.
Toss the coconut with the egg mixture until completely coated.

With moistened finger tips, form about 1 tablespoon of the batter into pointed mounds or pyramids on the prepared pans.

Bake until the edges are golden brown and the entire macaroon is nicely toasted and dry,
about 20 minutes.  Transfer to a rack to cool.


I lightly whisked the egg whites,
then whisked in the sugar.

Whisk away.


Add in cranberries, ...

... vanilla, ...

... and zest.

Add in coconut
and thoroughly coat.



Fashion little mounds
and bake. 

You want nicely browned edges.
