Rosie Starts Her Annual Rosiethon Of Christmas Baking.

It's started, everybody.
The Annual Christmas Rosiethon has begun.

 
Day 1 of the Rosiethon.
Today, I'm making the Ultimate Chocolate Cookie.

Ultimate Chocolate Cookie

1 1/2 cups flour
1/2 cup cocoa powder
1 tsp baking powder
1 tsp salt
2 cups semi-sweet chocolate pieces
3/4 cup butter, softened
1 1/2 cups packed brown sugar
3 eggs
1 tsp vanilla
1 cup bittersweet chocolate pieces
1 Recipe Chocolate Ganache

Heat oven to 350 degrees.
In a medium bowl, mix flour, cocoa, baking powder, and salt.  Set aside.

In a medium heavy saucepan, combine 2 cups of the chocolate pieces and 2 TB butter.  Stir over low heat until melted and smooth.  Set aside to cool slightly.

In a large mixing bowl, beat the remaining butter on medium high for 30 seconds.  Beat in brown sugar until combined.  Beat in eggs, 1 at a time, scraping down sides of bowl after each addition.  Beat in melted chocolate mixture and vanilla.

Add flour mixture and beat at low speed until well-combined.  Stir in the cup of bittersweet chips.

Drop dough by rounded teaspoons onto ungreased cookie sheets.

Bake about 10 minutes.  Let cool on sheets for a few minutes then transfer to wire rack to cool.

Dip half of each cookie in the ganache.

Chocolate Ganache
In a small, heavy saucepan, combine 1/2 cup heavy cream, 1 TB butter, and 1 TB sugar.  Bring just to boiling, stirring to dissolve sugar.  Remove from heat and pour hot cream mixture over 1 cup bittersweet chocolate pieces.  Let stand for five minutes.  Stir until smooth.


Combine dry ingredients.

Whisk away ...

...  until well-blended.


Melt the chips and the butter.

In mixing bowl,
combine remaining butter, sugar, and ...

... the eggs ...

... one at a time ...

... beating well after each addition and scraping down the sides.

Add in chocolate mixture.

And vanilla.

Add in dry ingredients.

Stir in bittersweet chocolate.

Drop by teaspoons onto your baking sheets.



Bake at 350 for 8-10 minutes,
or until edges are firm.
Cool on racks.






While the cookies are cooling, prepare the ganache:
Place one cup bittersweet chips
in a medium bowl.

In a small saucepan,
combine 1/2 cup heavy cream, 1 TB butter,
and 1 TB sugar.
Bring to a boil.

Pour hot cream mixture over chocolate chips
and let sit for 5 minutes.

Then stir until smooth.


Dip half of each cookie in the ganache.

Let cool until the ganache is set.

  2. Christmas Cookies. My favorite part of the season. I think I'm only making two kinds this year though. No one eats them but ME and I certainly don't need to eat THAT many!

  4. Yo Rosie...I'm gonna attempt these over the weekend...is that 1/2 CUP of Cocoa powder in the recipe? I just wanna check to make sure it's not 1/2 can or 1/2 of a half cup or 1/2 gallon or some such. Bake on sistah!
