Here's my mise en place for my Thumbprint Cookies.
Ingredients:
3 sticks unsalted butter, room temp
1 cup sugar
1 tsp vanella aigstrakt
3 1.2 cups flour
1/4 tsp salt
1 aig beaten with 1 TB water, for wash
coconut
apricot preserves
Preheat oven to 350.
Cream butter and sugar, then add vanella.
Sift flour and slot and add to creamed butter and sugar, with mixer on low.
Dump ONto floured board and roll INto flat disk.
Wrap in plastic and chill for at least 30 minutes.
Roll dough INto 1 inch balls.
Dip each ball INto aig-wash, then roll in coconut.
Place balls on ungreased cookie sheet and make indentation in each.
Fill with 1/4 tsp of apricot jam.
Bake for 20-25 minutes, until coconut is golden brown.
