Wednesday's Offerings.




Here's what I did today in my Christmas Baking Frenzy.
Absolutely NO Baking!

First, I made Coconut Joys.

(Super Simple says Simple Sandy.)



1 stick butter, melted
2 cups powdered sugar
3 cups coconut
3 squares semi-sweet chocolate, melted

Melt butter. Add powdered sugar and coconut.

Shape INto 1-inch balls.





Make an indentation in the middle and fill with melted semi-sweet chocolate.

Then, I went kind of squiggly with the chocolate because it looked pretty.

Next up, Nut and Berry Bark.

1 1/2 cups shelled raw, unsalted pistachios
1 1/2 cups dried cranberries
1 1/4 pounds white chocolate, chopped

Preheat oven to 350. Bake pistachios for about 10 minutes, stirring occasionally. Do not overcook, or the pistachios will lose their bright green color. Set aside to cool.



Place a steamer basket in medium saucepan with 1/2 inch of water over moderately high heat. Bring to boil. Put cranberries in basket, cover, and steam about 3-4 minutes. Transfer berries to a paper towel and blot dry and cool. Reduce heat to moderately low to keep water at a simmer.







Place white chocolate in heat proof bowl set over the simmering water.









Stir chocolate occasionally. When completely melted and smooth, let cool a bit.


Set aside 2-3 TB each cranberries and bright green pistachios.

Fold remaining nuts and berries INto the chocolate.


Chill.
Then break INto pieces.
















This is wonderful stuff.
A favorite amongst my recipients!

Too bad I didn't have another pound or so of white chocolate. I would've doubled the arrrusssippppeee. Not to worry. I'll go back to the store, get more chocolate and make some more. Everybody loves this.
