Christmas Baking. Day 2. Cookie #8. Sugar Cookies.

Rosiethon 2010. I like to prettify these up with colored sugar.
Sugar Cookie Ingredients: 2 sticks butter, softened 1 cup white sugar 1 cup confectioners sugar 2 eggs 1 tsp salt 3/4 cup vegetable oil 1 tsp vanilla 4 cups flour + 4 TB flour (Sift before measuring.) 1 tsp baking soda 1 tsp cream of tartar Cream butter and both sugars. Beat in eggs and salt. Beat in oil and vanilla. Add dry ingredients and mix well. Cover and refrigerate dough overnight. Roll into small balls. Place on ungreased cookie sheet. Press balls down with bottom of glass dipped in mixture of sugar and nutmeg. Bake at 350 degrees for 10-12 minutes.
Cream butter.
Add in sugars.
Add in eggs, one at a time, beating after each addition.
Salt in.
Add in oil, beating.
Vanilla.
Add in sifted dry ingredients, beating. Do not be alarmed when all kitchen surfaces have a light dusting of "snow." It's Christmas!
You end up with a surprisingly light batter.
Cover and refrigerate overnight.
Roll into small balls and place on ungreased sheet.
Grate some nutmeg into the sugars. You could use regular granulated sugar but I like to be festive.
I would never expect that the nutmeg would have such a positive impact on these cookies, but it does.
Press a glass bottom into the sugar/nutmeg then flatten each ball.
Bake at 350 degrees for 10-12 minutes.
