Christmas Baking. Day 5. Cookie #14. Toffee Bars.

It's Christmas Baking Day #5. And Rosie is making Toffee Bars. Let's go with the mise:
Toffee Bar Ingredients: 2 sticks butter 1 cup packed brown sugar 1 egg yolk 1 tsp vanilla extract 2 cups flour 1 cup chopped, toasted, cooled pecans 1 1/4 cups semi-sweet chocolate morsels Beat butter, brown sugar, egg yolk, and vanilla in bowl until creamy. Stir in flour and 1/2 cup pecans. Spread into 9 x 13 inch greased pan. Bake in 350 degree oven for 20-25 minutes until lightly browned. Immediately sprinkle chocolate morsels over hot base. In 5 minutes, spread chocolate over surface. Sprinkle with remaining pecans.
Cream butter until light and fluffy - about 3 minutes.
Add in brown sugar and cream away ...
... until well mixed.
Add in yolk ...
... and vanilla.
Lower speed and slowly add in flour ...
... until well incorporated.
Add in half the nuts, saving the rest to sprinkle over top.
Turn mixture out into a greased 9 x 13 inch baking pan.
Cover with plastic wrap and spread evenly.
Thusly.
Bake at 350 degrees for 20-25 minutes or until lightly browned.
Immediately pour chocolate chips over top and let sit for about 5 minutes ...
... before spreading chocolate.
Sprinkle remaining nuts over top.
And press into chocolate.

We've made these every year since I was a wee bairn. I LOVE them. I'll have to try some nuts in the dough though. That looks good. And, in keeping with the family motto of "more is better", we figure what-the-heck & dump the whole 12 oz bag of chocolate chips on top. Hey, there's no sense having a little bit left over, right?
