Ahhhhhh. The Fourth Bushel Of Oysters.

  You know how the Hawthornes love their oysters.
We just bought our fourth bushel.

  Mr. Hawthorne steamed them tonight.

First he sprayed the oysters off.
Cleaned them very well with the hose.
Got rid of all the mud and grit.


The oysters went into the pan with a half inch of water.
Cover and steam for about 10 - 12  minutes.
Check to see if they're opened.

 We really, really, really lovelovelove our oysters.


As for the sauces in the back:

The red is my favorite cocktail sauce
with ketchup, horseradish,
Lea & Perrins Worcestershire sauce, and lemon juice.
In that order.

Remember not to mix thoroughly.
You want to swirl.
You want pockets of flavor.

The dark sauce in the blue bowl is Mr. Hawthorne's:
Balsamic vinegar and Old Bay

So simple and so very good.

 Ahh.
My first oyster nugget.





These were insanely good.

Consider the oyster.
 Or whatever.
In clarified butter.
One must clarify the butter. I'm convinced of this now.
