Rosie Makes Couscous With Asparagus And Spinach.

I have lots of asparagus right now.
From one lone plant in my rose bed.
And I'm trying to come up with asparagus recipes.
Previously, I've made

 
Today, I made asparagus couscous.
It's SPRINGONAPLATEITELLYA!

I went out to my rose bed and picked some primo asparagus.
That's a box of couscous and a bunch of spinach in the back.

ChopChop the spinach.

Chop the asparagus, reserving the beautiful tips.

Melt a tablespoon of buttah in a medium hot pan
and throw in the spinach and asparagus.
Cook about a minute.

Add in about 1/3 cup of couscous.

Moved it around a bit.
For about a minute.

I poured in about a cup of vegetable stock.
Brought it to a boil.
Removed from heat.
Covered it.
Left it 10 minutes.

Uncover and fluff.

Chop up some parsley.

Throw it in.

Grated Parmesan.

Zested lemon.
Reserved asparagus tips.

Looks delicious! Here is a funny asparagus story -- When my son was little, he told me he liked asparagus but he didn't like "the tails" but it was OK because Grandpa ate them for him. My dad looked sheepish, then admitted that my son cut the tips off, ate the stalks, and gave the tips to my dad, who volunteered to eat them for him. What a guy! Always willing to take one for the team.
