The Rosiethon. Day 5. Kourambiethes.


Day 5 of the Rosiethon.
I happened to come across an old recipe
tucked in my notebook which I'd overlooked.
It's a Greek cookie called Kourambiethes.


Traditionally, it's studded with cloves,
but I hesitate giving away cookies
 with potential dental disasters waiting in the wings.

I'll leave the cloves in for now,
to flavor the cookie,
but I'll remove them before packing off for delivery.



Kourambiethes

1 pound butter (4 sticks)
1 cup powdered sugar
2 egg yolks
1 TB vanilla extract
5 cups flour

Cream butter and sugar.
Beat in yolks and extract.
Add in flour 1 cup at a time, beating at low speed and scraping down the sides.
Shape into balls.
Place whole clove in center of each ball.
Cook 15 minutes at 350 degrees.
While still warm, sift powdered sugar over cookies.

Variations on the same theme. This one has a clove tucked in the middle, which I think I should remove before packing these off. Choking hazards and all.
