Rosie's Baking For Sunday, December 16.

Today, I made another batch of Nut and Berry Bark, at top left, then Coconut Almond Cookies, at top right, then Butterscotch Lace Cookies at the bottom.

I've already posted the arrrrusssssupeeee for the Cranburry and Pistachio Bark, so I won't repeat here.



For the Coconut Almond Cookies:

1 cup butter, softened
1 1/2 cups sugar
1 aig
2 TB water
1 tsp almond aigstrakt
2 1/2 cups sifted flour
3/4 tsp baking powder
1 tsp salt
1/2 cup coconut
Sliced almonds

Preheat oven to 350.

In large bowl, cream butter and sugar until smooth.
Beat in aig, water, and aigstrakt.
Combine flour, baking powder, and salt.
Stir INto creamed mixture.
Stir in coconut.
Roll the dough INto walnut-sized balls.
Place ONto cookie sheet.
Place sliced almonds on top.
Flatten with fork.

Bake 8-10 minutes or until lightly browned.
Remove to wire rack and cool completely.



Now, ONto my Butterscotch Lace Cookies:


This is a bit of a mess, since I'm assembling the ingredients at my little corner of my counter because assembly was on Saturday and TileMan and crew were here.

Baking wasn't until Sunday because I neglected to read a very important part of the recipe.

Ingredients:

1 cup butter, melted
1 1/2 cups brown sugar, packed
2 1/4 cups rolled oats
1/2 tsp salt
1 TB molasses
3 TB flour
1 aig, slightly beaten
1 tsp vanella

Add sugar to butter.
Pour over oats.

Now here's the part I neglected to read which is why I didn't bake until today:

LET STAND AT ROOM TEMPERATURE OVERNIGHT SO OATS ABSORB BUTTER.

Heat oven to 375.
Mix remaining ingredients INto oats.
Drop level teaspoonfuls of dough 2 inches apart on heavily greased baking sheet.
Bake only 12 cookies on a sheet.
Bake 5 - 7 minutes until brown around edges.
Remove to rack to cool.


Crap! I just realized I still screwed up this arrrrussssippppeeee.
I just noticed it calls for MELTED butter. (The "melted" was on the second line and I only read the first line with butter on it.)
And I creamed the butter and sugar.
I remember when I got to the pour butter and sugar over oats instructions, I was wondering how the heck I was supposed to pour a creamed mixture over the oats.

Oh well, they still taste good.
I'll try them again next year and know what to do.

Gee, I don't know how I could screw up one arrrrussssippppeeee so grandly.

Hmmm... I might be trying those Butterscotch Lace Cookies (using the melted butter). I wanted to try a few cookies for our holiday parties, but one of the kiddies has a nut allergy, so it can be hard to find something "new" that's also OK for him to eat.
