Day 1 Of Rosie's Christmas Baking - Dixie Peanut Brittle.

Tuesday, December 8. I'm starting on my Christmas Baking. First up is my Peanut Brittle.
My ingredients: 2 cups sugar 1 cup light corn syrup 1/2 cup water 1/2 tsp salt 3 cups peanuts 2 TB butter 2 tsp baking soda Bring the sugar, corn syrup, water, and salt to a boil. Reduce heat and add the peanuts. Cook to 300 - 310 degrees. Beat in butter, then baking soda. Quickly pour onto buttered 12 x 17 pan.
Mix the sugar, corn syrup, water, and salt. Bring to a rolling boil.
Add in peanuts and reduce heat.
Cook to 300 -310 degrees.
Add in butter, beating.
Then add in baking soda, beating. Here's a little video so you can see the brittle get all foamy when you add in the baking soda.
Pour into buttered pan. Let cool, then break into pieces.
