Day 2 Of Rosie's Christmas Baking - Heavenly Delights.

These are called Heavenly Delights. I make them every year.
These are heavenly. And they are delightful.
Ingredients for Heavenly Delights: 1/2 cup butter, softened 1/2 cup Crisco 2/3 cup sifted powdered sugar 1 tsp vanilla extract 1 tsp lemon juice 2 cups flour 1/2 cup chopped pecans sifted powdered sugar Cream butter and shortening. Gradually add powdered sugar, beating until light and fluffy. Gradually add flour. Mix well. Stir in chopped pecans. Chill. Shape into 1 inch balls. Place on ungreased cookie sheets. Bake at 350 for 20 minutes. Remove immediately and roll in powdered sugar.
I creamed the butter and shortening. Added in the sugar, beating until light and fluffy. Gradually added in flour.
Stirred in chopped pecans.
Took out my trusty lemon baler ... My melon baller???
Made small balls.
After baking for 20 minutes at 350 degrees, I removed the Delights, and rolled them in powdered sugar. Cooled. And rolled again.
This little tool is one of the best for dealing with cookies. Slip and slide. And release. It's got a very thin edge. Get one and use it. You be glad you did.
