Day 7 Of Rosie's Christmas Baking - Lemon Cookies Using Butter Cookie Dough.

I'm still on Day 7, Monday. Earlier, I had made a Basic Butter Cookie Dough. Actually, I made 2 double recipes. The first double recipe, I pressed the dough into 2 buttered, foil-lined 9 x 13 baking pans and made Brownie Squares and Caramel Pecan Cookies. For the second double recipe, I halved the Butter Cookie Dough. With the first half, I'm making Lemon Cookies. Lemon Cookies Butter Cookie Dough 2 TB fresh lemon juice 1 TB grated fresh lemon zest Add juice and zest to basic butter cookie dough.
I grated my lemon.
Added the zest to the dough.
Added the lemon juice to the dough and mixed well.
I rolled the dough in a log and chilled it for several hours.
A perfect opportunity to use my lemon baler. (Thank you, Sandy.) Bake for 12-15 minutes at 375 degrees until bottoms are lightly browned.
Delightfully light, buttery, and lemony.
