Day 8 Of Rosie's Christmas Baking - White Christmas Fudge.

It is Tuesday, Day 8. I'm making White Christmas Fudge.
White Christmas Fudge 2 1/2 cups powdered sugar 2/3 cup milk 1/4 cup butter 12 oz. white chocolate 1/2 tsp almond extract 3/4 cup dried cherries, cranberries 3/4 cup almond slices, toasted Line 8-inch square pan with buttered foil. Mix powdered sugar and milk in heavy saucepan. Add butter and bring to a boil over medium heat, stirring constantly. Boil for another 5 minutes, undisturbed. Over low heat, add chocolate and almond extract. Stir, then whisk, until chocolate melts and mixture is smooth. Stir in dried cherries and toasted almonds. Pour into prepared pan. Refrigerate. Cut into 1-inch squares. I doubled this recipe. And I baked it in a 9 x 13 buttered pan. For the dried fruits, I used 1 cup dried cherries and 1 cup dried cranberries. For the milk, I used 2/3 cup 1% milk and 2/3 cup heavy cream.
I buttered my foil and lined a 9 x 13 baking pan.

Boil, undisturbed for 5 minutes.
Over low heat, add chocolate ...

... almond extract.
Stir ...
... then whisk until chocolate melts and mixture is smooth.
Stir in dried cherries and cranberries ...
... and almonds.
Mix well.
Pour doubled recipe into 9 x 13 buttered foil pan.
Spread mixture evenly in prepared pan.
Cover with plastic wrap, take your mini rolling pin, (Heh heh heh, Brycer, you Bobby Flay lover, you.) and press and spread evenly.
White Christmas Fudge. Indulge.
