Day 11 Of Rosie's Christmas Baking - Gingersnaps.

It is Friday, Day 11 of Rosie's Baking Marathon. And Gingershnaps are today's effort. Sorry, I've been drinking. It's been a day. Poor Little Youngest Hawthorne came in with Junior last night and complained of his wisdom tooth hurting. I called our dentist's office this morning, and thanks to Liz, the best office manager in the entire world, Youngest Hawthorne had an appointment within the hour. Turns out the tooth was coming in crooked and had to be extracted. A BIG OUCH. Youngest Hawthorne is in bed now, hurting. Poor Little Hawthorne. Where was I? Gingersnaps?
Yes, gingersnaps. I got this recipe from Sister Hawthorne. And she always makes the bestest gingershnaps ever. My gingershnaps never ever ever come out as good as hers. I substitute butter for her margarine. I'm sorry. I simply cannot use the "margarine." Also, I double her recipe. (Sometimes, you just can't double a recipe.) And I thought they needed more baking. So I was at 9 - 10 minutes. And I had to throw out the first batch I did because they weren't cooked on the bottom. There. You have it. My dirty little secret. I subbed and doubled and overcooked. And it doesn't work as well as hers, but these were still very good.
Sistah Hawthorne's Recipe For Gingersnaps Cream: 3/4 cup margarine 1 cup sugar Add: 1 egg 1/4 cup molasses Sift: 2 cups sifted flour 2 tsp baking soda 1/2 tsp ground cloves 1 tsp ginger 1/2 tsp salt Add flour mixture to mm ... mmm ... mmma ...mmar ... mar ... margarine mixture gradually, beating and incorporating each batch of flour. Chill, then roll into balls. Place on ungreased baking pan and bake for 5 - 7 minutes at 350 degrees.
I'm getting ready to mix my dry ingredients Of course, my ingredients are doubled. I have 4 cups sifted flour 4 tsp baking soda 1 tsp ground cloves 2 tsp ginger 1 tsp salt

Sift dry ingredients.
I creamed my butter and sugar. It has to be the doubling of the recipe, not the substitution of butter for margarine, that makes the difference.
I added in one egg.
And another. Getting a good picture of an egg releasing from the shell into a receptive batter, is hard to do.
Molasses in.
Sifted flour mixture in.
Roll into small balls and place on ungreased baking sheet.
Bake about 7-9 minutes at 350 degrees.
I love my gingershnaps.
But I love Shishter Hawthorne's better.

  2. I never, ever use margarine. Did you really think I would use margarine?!! I think this just might be a recipe that can't be doubled. That is the case sometimes. I have never doubled it - but then I have never tried to make as many sweets in as many days as you have! They all look delicious, Sistah Dear. I look forward to the postman's delivery.

  3. Well, Sistah Dear, you gave me the recipe and it had margarine in the distructions. That's what Middle Hawthorne, when he was 3, used to ask me for - the "distructions" for how to play a computer game.
