Day 13 Of Rosie's Chrismas Baking - Luscious Lemon Bars,

It's still Sunday, Day 13. And I'm making one of my favorites - Luscious Lemon Bars. Or squares, in my case.
Crust ingredients: 1 cup flour 1 stick butter, softened 1/4 cup confectioners' sugar Mix flour and sugar. Cut in butter with a pastry blender. Press into a buttered 8" square pan. Bake at 350 for 20 minutes. While the crumb crust bakes, make the lemon topping.
I added the softened butter to the flour/sugar mixture with my pastry blender, working a bit of butter at a time.
Pour into prepared pan.
Use plastic wrap over top and press to even the dough. My mini-rolling pin is getting quite the workout. Brycer would be jealous.

Lemon Topping 1 cup sugar 2 eggs 3 TB flour 3 TB lemon juice 1/2 tsp baking powder grated rind of 1 lemon Blend all ingredients together and pour over the baked crust. Bake for an additional 25 minutes. Let cool. Sprinkle with confectioners' sugar and cut into bars. Or squares.
I beat the eggs first, then gradually added in the sugar, beating continuously.
You want to keep beating until the egg/sugar mixture is a light lemon color.
Add in flour.
Lemon juice.
Lemon zest.
Add in baking powder.
Pour over crust.
Bake for 25 more minutes.
Let cool.
Sprinkle powdered sugar over top.
