Day 2 Of Rosie's Christmas Baking - Mocha Toffee Cashew Bars.
I started out Wednesday
with Mocha Toffee Cashew Bars.
Rosie jumped back into work this morning.
It's Day 2.
And Rosie is throwing herself first
into Mocha Toffee Cashew Bars.
Ingredients:2 sticks butter, softened1 cup packed brown sugar1 large egg yolk2 tsp vanilla3 TB ground coffee dissolved in 2 TB boiling water2 cups flour1/2 tsp salt8 oz bittersweet chocolate3/4 cups cashewsPreheat oven to 350 degrees.
Beat butter and brown sugar until fluffy and pale,about 3 minutes.Beat in yolk, vanilla, coffee mixture.Add flour and saltand mix until just combined.Spread batter evenly in 11 x 17 baking panand bake about 20 minutes, until top puffs and sides pull away.Pour melted chocolate over top.Sprinkle with cashews.Cool.Chill.And cut into 48 bars.

Glop of batter in pan.
Spread it out evenly.
