I started out Wednesday
with Mocha Toffee Cashew Bars.
Rosie jumped back into work this morning.
It's Day 2.
And Rosie is throwing herself first
into Mocha Toffee Cashew Bars.
Ingredients:
2 sticks butter, softened
1 cup packed brown sugar
1 large egg yolk
2 tsp vanilla
3 TB ground coffee dissolved in 2 TB boiling water
2 cups flour
1/2 tsp salt
8 oz bittersweet chocolate
3/4 cups cashews
Preheat oven to 350 degrees.
Beat butter and brown sugar
until fluffy and pale,
about 3 minutes.
Beat in yolk, vanilla, coffee mixture.
Add flour and salt
and mix until just combined.
Spread batter evenly in 11 x 17 baking pan
and bake about 20 minutes,
until top puffs and sides pull away.
Pour melted chocolate over top.
Sprinkle with cashews.
Cool.
Chill.
And cut into 48 bars.
