Day 2 Of Rosie's Christmas Baking - Mocha Toffee Cashew Bars.

I started out Wednesday with Mocha Toffee Cashew Bars.
Rosie jumped back into work this morning. It's Day 2. And Rosie is throwing herself first into Mocha Toffee Cashew Bars.
Ingredients: 2 sticks butter, softened 1 cup packed brown sugar 1 large egg yolk 2 tsp vanilla 3 TB ground coffee dissolved in 2 TB boiling water 2 cups flour 1/2 tsp salt 8 oz bittersweet chocolate 3/4 cups cashews Preheat oven to 350 degrees. Beat butter and brown sugar until fluffy and pale, about 3 minutes. Beat in yolk, vanilla, coffee mixture. Add flour and salt and mix until just combined. Spread batter evenly in 11 x 17 baking pan and bake about 20 minutes, until top puffs and sides pull away. Pour melted chocolate over top. Sprinkle with cashews. Cool. Chill. And cut into 48 bars.
Here are the butter and brown sugar mixing up with yolk and vanilla going in.
Coffee mixture going in.
Glop of batter in pan.
Spread it out evenly. That little off-set spatula is one of my favorite kitchens tools.
Bake the base, then pour chocolate on top.
Sprinkle with cashews.
These are delightful morsels.

*looks in freezer for nuts* Have you ever tried making these with pecans or almonds?
