In case you're wondering what my little Hawthornes
have been eating lately,
let me assure you they have not had a steady diet
of sugar and butter and chocolate.
I have actually prepared
real meals for them.
A few nights ago Mr. Hawthorne
cooked a hen for the boys.
(Yay! Another item out of the freezer.
Now, I only have 6 hens left.)
The Hawthorne Boys love burritos,
so the next day for lunch,
I fixed them chicken burritos.
I pulled off most of the meat and
sauteed a green pepper and an onion
in a bit of ELBOO.
That's Extra Light Bertolli Olive Oil.
After sauteeing the veggies for a minute or two,
I added in the chicken and heated through.
Cumin went in next.
How much?
Depends.
Try a teaspoon at a time and
taste test.
Mr. Hawthorne had made rice with the chicken
so I added that too.
Plus a can of black beans.
Normally I don't use canned beans
but the boys were hungry and wouldn't wait
for me to cook any beans.
Be sure you rinse all the slime off first.
Heat through.
While the chicken mixture was heating,
I made a salsa.
I chopped up a few of the last of our heirloom tomatoes,
chopped some onion,
used a few tablespoons of my canned jalapenos,
some cilantro,
about a teaspoon each of vinegar and sugar,
some salt and pepper.
My salsa is looking rather festive.
I put the chicken mixture on half of the tortilla,
topped it with Pepper Jack cheese,
then rolled it up.
Middle Hawthorne helped by
adding slices of cheddar and Monteray Jack cheese.
Bake until the cheese melts.
Serve with salsa and sour cream.
These were gone in a few minutes.
